Yes, you should be able to "nest" symbols. The trickiest part of creating
them is that each successive "level" must be saved as a new symbol because
they can't be self-referencing.
As far as exploding them, there are two tools available: DC Sprint's Symbol
Explode is much more sophisticated, as you can set the number of levels that
get exploded, and also you can have stuff move to it's original layer after
exploding. The regular old Symbol Explode does one thing: explode the symbol
-- I believe one level at a time.
As to why you are exploding Text -- this is a new one on me! It shouldn't
happen -- are you using the 3D Explode?
